First you need to setup the tax stockitem see the link below for the steps to do it:
https://w40.roomsoftware.com/en/help/Tax-in-the-New-Price-system Now create a Rate Category in. settings/rate-categories Set the dates you want the tax amount to be changed and choose which days of the week it should be active. For instances it could only be active for weekends. After the tax stock item was created. Go to settings/items Find the created stockitem then press on the gear icon of that item. When in the setting find the checkbox for Rate Categories 
Now check the checkbox for the rate categories. Then click save. Now you can insert the discounted or increased amount for the rate category.  | |
